Coconut berry chia pudding

Ingredients (Makes 2 to 3 servings)

1/3 cup chia seeds
3 cups of milk or milk alternative (such as soy milk)
1 tsp of cinnamon
1/2 tsp of vanilla
1-2 cups berries
1/3 cup of toasted coconut flakes
Honey (~ 1 tsp)


In a bowl, mix chia, milk, cinnamon and vanilla well. Refrigerate overnight. Add berries, honey (I usually add 1 tsp per serving) and toasted coconut (1 heaping Tbsp) to serving over chilled chia pudding.
